ExistUp Reboot Organic Chicken Fajita Soup
Clean eating is an important part of how we ExistUp. This quick and easy soup is a family favorite. Prep takes about 5 minutes and with the XL Pressure Cooker, we can have this soup on the table in less than 45 minutes.
Alternately, you can toss all of the ingredients in your slow cooker in the morning and cook on low for 8 hours. Shred chicken before serving.
Organic Chicken Fajita Soup
1 lb organic chicken breast or thighs
4 cups water
1 organic yellow onion, diced
1 organic red bell pepper, diced
1 can organic cannellini or red kidney beans, rinsed
1 bag organic frozen corn
2 16 oz jars organic salsa
Add water and chicken to pressure cooker and set for 20 minutes. Remove chicken and shred. Add all other ingredients to the XL power pressure cooker cook again for 10 minutes. Serve with organic corn chips and avocado.
