Red Lentil Samosas 

Filling Ingredients:

2 cups red lentils

4 cups chicken  or vegetable stock

4 tbs olive oil

2 diced red onions

1 small bag carrots diced

2 diced sweet potatoes

2 inches fresh ginger

5 cloves garlic

1 tsp cumin seed

2 tsp cumin

1 tsp garam masala

3 tsp curry powder

2 tsp chili powder

1/2-1 tsp red pepper flakes

1 tsp pink Himalayan salt

Filling Directions:

Simmer lentils in stock until done, approx. 20 minutes. 

 

In frying pan sauté cumin seeds in olive oil until they sputter, add diced red onion and cook until translucent. Puree or finely chop fresh ginger and garlic, add to pan and cook 1 minute. Add diced carrots and all spices and toss to coat.

 

Cook for 3-4 minutes adding a bit of stock or water if it looks too dry.  Toss together with cooked lentils.

   

Stuff ExistUp Gluten Free Onion Naan Bread  with a scoop of mixture, fold into a triangle packet, spray with olive oil and bake 15 minutes at 375.

 

This samosa filling is great served hot or cold as hummus with blue corn chips or veggies!

The red lentil filling is easy to put together and cook while you are prepping the simple Naan to wrap it in. 

This recipe makes a lot and reheats well for spectacular lunches!  The filling is also fantastic as a hummus with carrot sticks, blue corn chips or bell peppers!

Naan Ingredients:

1 1/2 cups gluten free almond flour blend

1 can  organic coconut milk

1/3 cup water

1 tsp pink Himalayan salt

1 tsp baking soda

2 tbsp organic dried onion flakes

 

Coconut oil for cooking

Naan Directions:

Whisk dry ingredients to incorporate.  Add water and coconut milk and whisk or use mixer until smooth.

 

Preheat frying pan or griddle to medium high, or 350. Grease with coconut oil.  Pour batter and spread gently into approximately 3 inch diameter circles.

 

Flip when batter appears dry on the top, bottom should be golden, approximately 4 minutes.  Cook the other side until golden.  Keep naan warm in a 200 oven while cooking the rest of the batch.
