Air Fried Rosemary & Lemon Chicken

Delicious, juicy,  organic roasted chicken cooked to perfection in under an hour!  We love my air frier for many meals, this being at the top of the list.

 

Lemon and rosemary really make this dish pop.  We love organic tricolor carrots for their sweet flavor and added visual interest!

 

Simple ingredients, minimal prep time, gourmet meal. How does it get any better than that?

Gluten Free, Paleo and ExistUp Reboot Friendly

Ingredients:

1 organic chicken

1 bag organic tricolor carrots

1 bag organic new potatoes

5 tbsp non-GMO extra virgin olive oil

3 lemons

4 sprigs fresh rosemary

3 tbsp pink Himalayan salt

2 tbsp organic black pepper

Directions:

Cut lemons in half and juice into a small container, save lemon halves. Crush rosemary with salt and pepper reserving one sprig for garnish. Mix lemon juice, olive oil and seasonings together.

Peel carrots and remove ends. Wash potatoes.  Rub carrots and potatoes with 1/2 of the olive oil, lemon and seasoning mixture.  Bake 350° for 35 minutes or until desired tenderness.

Rinse chicken and pat dry. Rub chicken with the other half of olive oil, rosemary, sea salt and pepper mixture. Fill chicken cavity with juiced lemon halves and rosemary stems.

Air Fry 400° 20 minutes each side or until internal temperature reaches 190°
