Banana Bread Breakfast Bake
1 can coconut milk
2 cans water
3/4 cup uncooked quinoa
1 1/2 mashed bananas
1/2 banana sliced for topping
20 pureed dates
1 teaspoon vanilla extract
1 teaspoon cinnamon
2 beaten eggs or 4 tbs chia seeds
1 cup unsweetened coconut
Reserve 1/2 banana, 1/4 cup coconut and a few nuts for topping.
Mix all remaining ingredients well, pour into 9X13 baking dish.
Top with coconut, nuts and sliced banana.
Bake 400 degrees for 40 minutes.
