Vegan Veggie Burger
I love to make a batch of these on Sunday for dinner and eat them on salads all week! Delicious and packed with micronutrients, protein and fiber. They are truly simple to make, tasty and affordable. Win, win, win!

1 can or 1.5 cups prepared organic black beans, drained
4 tbsp chia seeds
3 eggs or 1/3 cup chia seeds additional
2 large sweet potatoes, (baked or microwaved)
1 cup quinoa, prepared
2 limes, juiced and zested
1 tbsp chili powder
1tsp to 1 tbsp red pepper flakes (to taste)
1 tbsp pink Himalayan salt
2 tsp organic black pepper
1.5 tsp cumin
1/4 cup organic dried onion flakes
3 tbsp coconut oil, for cooking
Tip: I make my organic black beans, in no time in the pressure cooker. This is not your parents scary pressure cooker, this thing is cool! It cooks food in a fraction of the time, you save money and the environment and there are health benefits of cooking in a pressure cooker as well. We love our Power Pressure Cooker XL!
Mix all ingredients with the exception of the coconut oil, until well incorporated.
Preheat skillet medium/high with coconut oil.
Scoop 1/4 cup balls onto skillet and gently flatten and shape into round patty with a rubber spatula.
Cook 4 minutes and gently flip, reshaping and pressing patty to 1/2 inch thickness. Cook an additional 4 minutes.
Patties will be very delicate, handle with care:-)
