Avocado Stuffed Sweet Potatoes

Sweet and savory with a little kick, these avocado stuffed sweet potatoes are an amazing side dish or main course!  

With a unique combination of flavors, avocado stuffed sweet potatoes also are nutrient dense, making this a great addition to any meal, breakfast, lunch or dinner.

Ingredients:

4 medium baked white or sweet potatoes, cooled and cut in half.

¼ cup olive oil or avocado oil spray 

¼ cup organic corn flour meal

2 large Avocados  peeled and finely diced

1 large tomatoe diced

⅓ cup crushed walnuts or sliced almonds (or a combo of the 2)

2-4 tsp. cilantro

1/2 tsp. smoked paprika

1/2 tsp. pink Himalayan salt

½ tsp.  black pepper

1/8-1/2 tsp. cayenne

Directions:

Preheat oven to 400°F. Scoop out a bit of the potato flesh, leaving a pretty thick layer. Spray or coat with oil and sprinkle with corn flour on both sides. Place potatoes skin-sides down on baking sheet and bake 15 to 20 minutes.

Mix  diced avocados, diced tomatoes, and nuts. Gently mix in all seasonings and toss to coat.

Stuff baked potato skins with avocado mixture and serve immediately.
