Yellow Lentil Pasta Dinner
Yellow lentil pasta is hearty and delicious. It is loaded with protein and fiber making it a brilliant alternative to wheat pasta that will satisfy even the most finicky eater.
Sautéed tricolor carrots, kale and garlic make this yellow lentil pasta dinner delicious and nutritious.

1 box yellow lentil pasta - penne or rotini shape
1 bag tricolor carrots, peeled and diced
1 large red onion diced
1 cup grape tomatoes
3 garlic cloves diced
6 kale leaves chopped
1/4 cup olive oil
1 box chicken or veggie stock
1 tbsp Seasonello Aromatic Salt
pink Himalayan salt to taste
Cook pasta according to box directions. Strain reserving one cup pasta water.
In a large pan, Sauté carrots, onion, kale and garlic in olive oil until carrots are nearly fork tender. Add grape tomatoes, stock and simmer to reduce by 1/3.
Add pasta and reserved pasta water to sautéed vegetables and continue to simmer 2 minutes.
