Baked Oatmeal

Ingredients:

Baked oatmeal is a breakfast win!

More like apple cake than oatmeal, eat it hot or cold, with your fingers or a fork!  It is delicious and satisfying and will stick with you all morning.

Make it on Sunday afternoon and have a healthy, satisfying breakfast ready for you all week!  No excuses to hit the drive through!

Vegan, Gluten Free, Paleo and ExistUp Reboot Friendly.

Directions:
Combine the coconut milk, egg, vanilla, dates, cinnamon and mix to combine. Add oats, apples, raisins/other fruit. Pour into 8x8 or 9x9 glass baking dish.

 

Bake for 40 minutes at 350 degrees.


A nice variation is to omit the apple and dried fruit and add 1/2 cup of frozen blueberries, keep the almonds and coconut!
